The Healthiest Two Ingredient Pancakes

It can be a hard balance between healthy and tasty. But gone are the days where you have to try to convince yourself that that pure kale juice is the nicest thing you’ve ever drunk. Let’s face it, it’s really not nice at all. But what if I told you that you can now make your breakfast healthy, tasty and involve pancakes.

Enter my famous healthy, tasty pancakes. Believe it or not, it has only TWO ingredients! Yes, you read that correctly, just two.

Ingredients:

  • 1 Medium banana

  • 2 Eggs 

Method:

  1. Mash banana well so there are minimal lumps – no one wants lumpy gooey pancakes!

  2. Beat the eggs and add them to the mashed banana

  3. Mix the two well together

  4. If you’d like to add in any extras, now is the time. My favorites are shredded coconut, chia seeds and cinnamon. But have fun with it, you can try anything – even some choc chips if you want a little treat!

  5. Heat up your pan to a medium heat and when hot, spray some non-stick cooking spray, preferably coconut oil

  6. I like to make my pancakes on the smaller side, so I use about 1½ – 2 tablespoons of batter per pancake. In about 40-60 seconds, the bottom should have set, once it’s ready, flip it over until the other side cooks through too. Continue with the rest of the batter. With this size, it makes between 8-10 pancakes (one serving).

Serve warm with some syrup and fresh fruit and voilà!
